About a year ago now, I brewed this MoreBeer.com clone of Russian Rivers Consecration sour ale. It is a fantastic beer, one of my favorites and this homebrewing beer recipe kit really does it justice. After allowing my Consecration to age for about 12 months and then tasting the two next to one another, they are a very close match.

If you have not had the pleasure of tasting this incredible sour beer, Consecration is a sour dark ale aged in a Cabernet Sauvignon barrel. The beer ages for almost 8 months with currants and brettanomyces. What makes this MoreBeer homebrewing ingredient kit so special is that they provide actual oak chunks from real Russian River Consecration barrels! It seems like often times home brewers place a ton of attention of the brewing process and not enough on the fermentation process. The truth is that both are critical to making a good beer. Brewing yeast is highly temperamental and is heavily impacted by temperature. If the temperature is too cold it begins to shut down, slowing replication and fermentation. If this happen at the wrong time in the fermentation process you will wind up with a sweet and under fermented beer and potentially bottle bombs. If your temp gets too high high you may flash ferment your beer ending up with a bunch of off flavors created by your yeast. What you want in a nice consistent temperature, specific to your lager or all yeast strain. A temperature that is consistent 24 hours a day, not fluctuating wildly day and night. For most ale yeast strains you are looking for a target temp of about 68 F. Depending on where you live, what time of the year it is and what type of equipment you have available will determine how you want to handle controlling your fermentation temperate. In any case, you are probably going to want to purchase a temperature controller such as the Ranco Digital Temperature Controller pictured above. I have used both Ranco and Johnson controllers and would recommend either; the Ranco just tends to be a little less expensive. In an ideal situation you would hook the temperature controller to a chest freezer or refrigerator to help insulate the beer from the elements.

I have good news for my fellow home brewers. If you have always wanted a stainless steel fermentor for your home brewing setup but have been scared away from making the purchase by either the cost or the size than this might be the fermentor for you.
Last month MoreBeer.com released these new 7 gallon stainless steel conical fermentors and I picked up 2 of them. They currently retail for $225. There are several things that I like about these stainless steel fermentation buckets. First off is that they are small enough where the still fit in the chest freezer that I use as a fermentation chamber. Secondly, they have strong handles on the side that permit you to carry and move them around when they are full. Something that would be far more tricky with a larger 14 gallon conical stainless steel fermentor. Another thing that is great is that they have volume markers engraved into the side of the fermentor which is awesome!
Stainless Steel Fermenter
Perhaps the best thing about this stainless steel fermentor is that it wont crack, chip, break or possibly shatter if you drop it and embed large shards of glass into your leg! In most cases this will also make the need for a racking cane obsolete. It is also larger than standard carboys! With its plus sized 6.95 gallon capacity you wont have to worry much about head space during high krausen on a 5 gallon batch. Lastly what I like about it is that it is far easier to scrub than a carboy since the large lid comes off so that you have full access to the inside of the fermentor. Honestly about the only thing about a carboy that I miss is being able to watch the fermentation take place. It would also have been nice to have another valve on the very bottom so that you could remove trub or harvest yeast from the fermentor. Those two points aside, if you are looking to purchase a reasonably priced, high quality stainless steel fermentor or stainless steel brew bucket as they call this, than this is a great choice.

Before purchasing the MoreBeer Ultimate Sparge Arm, I had tried a variety of other sparge arms including a halo style sparge arm, and a spinning fly sparge arm. I was intrigued by the Ultimate Sparge Arm because it is constructed of stainless steel, had no moving parts, and no pin holes to get clogged. And with a name like the “Ultimate Sparge Arm,” I had very high expectations for it!
Thankfully, I was not disappointed. The Ultimate Sparge Arm is very durable; the stainless steel is thick, and the welds on it are clean and professionally made. Additionally, it is a very versatile sparge arm. It has an adjustable height knob that allows you to set the outflow in a variety of positions to avoid hot side aeration. Since the Ultimate Sparge Arm does not depend on a rotating arm to disperse the water or wort, it allows you to set the flow rate at any level, which is a real benefit over my previous fly sparge arm. It also includes a stainless steel ball valve so that you can easily make fine adjustments to the flow rate. The Ultimate Sparge Arm also includes a mounting bolt that allows you to quickly and easily mount it to the side of your mash tun.
Perhaps my favorite thing about the Ultimate Sparge Arm is that it permits you to recirculate wort through it and use it in a RIMS or HERMS system, which is something that I would never have been able to do with any of my previous sparge arms. Using the sparge arm in conjunction with my march pump, burner and digital temperature gauge, I was able to easily convert my all grain system over to RIMS which made my brew day a lot simpler when it comes to regulating my mash temperature. The Ultimate Sparge Arm is one of the best home brew purchases that I have ever made, and I highly recommend it.
